The story of LESS Eatery, formerly Bistro LESS, starts behind the scenes of Hertog Jan, which is bursting at the seams after the award of a third Michelin star and has to look for a larger location. In the original buildings, a new concept is being baptized, which can best be compared to an oversized, culinary tapas bar. At that time, Bistro LESS brought a simple, but well thought-out kitchen, with Spanish accents, canned fish, and meat on the grill.
Slowly the focus shifts from Spanish to global, and the dishes become more refined. During his many travels and four-hand dinners abroad, chef Gert de Mangeleer sharpens his predilection for exotic scents and worldly flavors. The new concept at 't Zand in Bruges combines buzzing cosiness with the vibe of a big city. LESS Eatery, as the new restaurant is now called, now also serves strong flavors from the Far East and Central America, and almost always in portions that you can share with the whole group.
